Muffins, Muffins, and more Muffins...

Basic Muffin Recipe

2 1/4 Cups Flour (I use fresh milled)
2 tsp Baking Powder
1/2 tsp Salt
1/4 tsp Baking Soda
1 Cup Sugar OR 1/2 cup Honey
1 Egg
1/2 cup Oil
1 Cup Buttermilk


Preheat oven to 400*F.
Measure dry ingredients into mixing bowl.
Add liquids and mix just til well blended.
Drop by spoonfuls into a 12 cup muffin pan or a 24 cup mini muffin pan.
Bake approx 20 minutes for regular size muffins.
Bake approx 12 minutes for mini muffins.

You can tweak this recipe by adding:
1 Cup Blueberries, 1/2 tsp Nutmeg, 1 tsp Cinnamon, and 1 tsp Vanilla Extract
OR
1 Cup Apple (diced or grated), 1 tsp Cinnamon and 1/8 tsp Ground Cloves
OR
2-3 Bananas (mashed), 1/2 tsp Cinnamon, 1 tsp Vanilla Extract, and 1/2 cup Nuts if desired.

Yum!! Do you just use hard white in your muffins?

I've used Hard Red, Hard White, Kamut, Spelt, and Soft White.
They all turn out just fine.
