Basic
Muffin Recipe
2 1/4 Cups Flour
(I use fresh milled)
2 tsp Baking Powder
1/2 tsp Salt
1/4 tsp Baking Soda
1 Cup Sugar OR
1/2 cup Honey
1 Egg
1/2 cup Oil
1 Cup Buttermilk
Preheat oven to
400*F.
Measure dry
ingredients into mixing bowl.
Add liquids and mix
just til well blended.
Drop by spoonfuls
into a 12 cup muffin pan or a 24 cup mini muffin pan.
Bake approx 20
minutes for regular size muffins.
Bake approx 12
minutes for mini muffins.
You can tweak this
recipe by adding:
1 Cup Blueberries,
1/2 tsp Nutmeg, 1 tsp Cinnamon, and 1 tsp Vanilla Extract
OR
1 Cup Apple (diced
or grated), 1 tsp Cinnamon and 1/8 tsp Ground Cloves
OR
2-3 Bananas
(mashed), 1/2 tsp Cinnamon, 1 tsp Vanilla Extract, and 1/2 cup
Nuts if desired.

I've used Hard Red, Hard White, Kamut, Spelt, and Soft White.
They all turn out just fine.
